Lighter and more nimble than their German counterparts, French chefs knives offer greater control of the tip of the blade, and use more of a forward motion than a rocking one. While German knife makers are engineers using the latest in robotics, the French remain skilled artisans. Eric, our maitre coutelier (master knife maker) is one of the few who still does all of his grinding in his own shop, for a much thinner and more consistent edge. Each hot-dropped blade is forged from high-carbon stainless steel and finished with an exquisite handle of Sicilian olivewood, fully seasoned and carefully hand buffed to a beautiful satin sheen. Easy to maintain; care instructions included. Handcrafted in Thiers, France.
